A VEGAN blogger from Burnham has been named as one of the country’s best cruelty-free bakers.

Laura Hemmington was selected as runner-up in PETA’s contest to find the best vegan baker in the UK.

Mrs Hemmington said: “I am a really keen baker and I love creating recipes. I thought the competition was an excellent way to show people that making delicious cakes is just as easy without eggs and dairy.”

After 18 years of living in Burnham, Mrs Hemmington moved to London for university and has stayed there, but her dad lives in her childhood home in Cambridge Avenue.

She has been vegan since 2012 and writes a blog dedicated to vegan cooking. Her Bramble Polenta Cake secured the runner-up position.

Mimi Bekhechi, from PETA, said: “Congratulations to Laura on her fantastic achievement! While all the entrants were worthy competitors, her delicate bramble cake had us salivating.

“The addition of polenta and thyme is both unexpected and inspired, and her easy-to-follow recipe shows just how simple vegan baking can be.”
